These salmon rolls will have you wishing every day could be sushi day.

Loaded with smoked salmon, English cucumber, leafy greens, and the tangy taste of sesame sauce, every bite is a delight to the taste buds... and the entire meal can be prepped in under 10 minutes (serves 1).

Smoked Salmon Cucumber Rolls with Sesame Sauce

Trim ½" of both ends of the English cucumber. Using a 'Y' peeler, peel long strips of the cucumber. Lay out each piece of cucumber, layering two pieces at a time.

Leaving 1" of cucumber from the bottom end, layer slices of smoked salmon up the cucumber slices. Lay on 3 or 4 spinach leaves on top of the smoked salmon. Place ½ tbsp sprouts on top of the spinach. Sprinkle with salt.

Starting from the top end, start somewhat tightly rolling the cucumber roll towards the bottom where there is a gap of cucumber left. Fix it with a toothpick.

Repeat with remaining cucumber slices until all of the smoked salmon is used up.

Garnish with green onion. Serve with Sesame Sauce.

Ingredients:

  • 1 English cucumber

  • 1 portion of smoked salmon, trimmed in lengths to the thickness of the cucumber

  • ½ cup baby spinach

  • ¼ cup alfalfa or other fine sprouts

  • ½ tsp salt

  • 2 tbsp green parts of green onion or chives, finely sliced

  • 2 tbsp IP sesame sauce

  • IP Dorados for serving
